Grilled Peach Mozzarella & Arugula Salad Meal Kit
1.5 LB peaches
1 lemon, juiced
2 TBSP Olive oil, plus more for brushing and drizzling
Salt and pepper to taste
Prepare gas or charcoal grill to a medium heat. Cut peaches in half and brush all over with olive oil. Lightly season cut side with salt. Grill cut side down until lightly charred, 3 to 4 minutes. Transfer to a cutting board and let slightly cool. Slice each half into thirds. Combine juiced lemon and 2 TBSP of olive oil to a small bowl and vigorously whisk with a fork. In a medium bowl, toss the arugula with whisked lemon juice and olive oil. On each plate per serving, top with arugula, 2- 3 slices of fresh mozzarella and slices of grilled peaches. Lightly drizzle with olive oil and balsamic vinegar if you prefer. Season with salt and pepper. Enjoy!
