Traditional kombucha is fermented from a black tea and sugar base. In addition to acting as probiotics, kombucha cultures produce a number of beneficial byproducts as they digest the sugars, including VItamin C & B12 and acetic acid, while retaining the polyphenols and antioxidants found in the tea itself. Characteristics of kombucha include a distint, pleasant tartness, natural carbonation, and low sugar content.

Katlyn Jennings, owner, operator and sole proprietor of Santa Fe’s new Kombucha company, The Kombucha Project, has been a home brewer of kombucha since 2009, before it became the country’s new favorite superfood, beer alternative, digestive aid and post-yoga beverage of choice. She launched The Kombucha Project in 2016 hoping to provide a local version of an increasingly popular product.
The Kombucha Project consistently carries kombucha in Ginger Brew, Original and Honey Jun, but Jennings plans to have a rotating offering of seasonal flavorings, intending to take advantage of New Mexico’s local produce. Jennings, who formerly worked with the New Mexico Farmers’ Marketing Association, is intimately familiar with the literal fruits of New Mexico’s labor. Her mission is to offer high quality, probiotic teas that taste good, feel good, and do good.
