Meatball Sandwich (2 eggs required)

2 pounds ground beef, thawed

1 teaspoon salt

1 teaspoon ground pepper

1 ½ cup breadcrumbs

2 eggs (not included)

Parsley, chopped

3 cloves garlic, minced

1 onion, finely chopped

4 baguettes, lightly toasted

1-2 tablespoons of cooking oil

1 lined baking sheet

1 jar marinara sauce, heated

Shredded mozzarella


Preheat oven to 400 degrees. Heat 1-2 tablespoons of cooking oil over medium heat. Add chopped onion and sauté until softened. Add garlic and sauté and additional 1-2 minutes. Remove from heat and set aside to cool. In a large bowl, combine, ground beef, 2 eggs, 1 ½ cups of breadcrumbs, salt, pepper, sautéed onion and garlic mixture and about 3 tablespoons of chopped parsley. Mix all ingredients well with your hands. Begin forming meatballs. Make 1-1.5-inch meatballs (or whatever size you desire).

Line up the meatballs on a lined baking sheet. Bake in the oven for about 25-30 minutes. Break open one of the meatballs to ensure they’re cooked all the way through. Lightly toast the baguettes in the oven. Begin forming each sandwich. Add meatballs, a drizzle of as much marinara sauce you desire (try not to touch too much of the bread with the marinara sauce to prevent the bread from getting soggy), and shredded mozzarella. Put back in the oven and bake until the cheese is melted. Remove from the oven and top each sandwich with fresh parsley and more marinara if desired. Enjoy!
